Note: Cured Olives. 2 1 can Red Seal Lye for each 10 gallons of water. 5 Ounces Salt for each 1 gallon of fresh water for packing. 2 Place olives in this solution for about 3 days. Cut a few olives every day to see how lye has penetrated toward the pit. When lye reaches the pit, drain off old lye water and replace with fresh water until all lye taste is gone (flush pots with running water to rinse for about 3 days). 2 Grandpa used stone pots with wooden lids to keep the olives under the water, stirring frequently. 2 Let's make some. Rick. 2 Jack and Mary used to hike up into the hills behind their home on Quail Cyn Rd and gather olives to cure. They also took the kids up to gather pinon nuts when they were available.
