Your assessment is correct - WikiTree is dedicated to quality over quantity, and thus the need for our 9-point 'Honor Code' which spells out exactly what is expected. It can be a steep learning curve, that is true. Feel free to go at whatever pace you feel comfortable in building your tree and learning the ropes. There is no rush!
Just wanted to say, though, don't worry about making mistakes as most things can be corrected! All profiles are a considered work-in-progress.

Now that you have had a little time to try WikiTree, there are a few more features you may find useful.
Ideas on what to include in a profile can be found in Styles and Standards, including some tips on writing biographies.
If you need to describe an event, an heirloom or a location relevant to your research, you may like to learn about Free Space Profiles.
Lastly, sometimes you'll run into unresponsive profile managers. We have a process for resolving those unfortunate situations.

SCHMIDT, SHAFER: [really common last names! Are there specific towns/cities I should look in?]
WOLFE: as "Wolf(f)": in Nürnberg (later 1500s); in Possendorf, Wilmsdorf, and Rabenau (1620-1753); Aschersleben (died 1684); Neuostra (early 1800s); Kirchheimbolanden and München (1856-1912); Berlin and Frankfurt (later 1800s-1980); Volkmarsdorf and Halle (born 1883); and Dresden (born 1912).

What particular German last names / family lines are you working to track down? My German father's genealogist published (1989) a volume of several hundred German lines, detailing a good many thousand named Germans, back to the 1500s, and further in a few more cases.
And though it's a long shot, it's possible there may be some connections. And other folks here have far more extensive databases to work with... so just let us know.
