Although Savard[1] indicates that son Césaire did not appear on the 1861 Census, this is incorrect. He was in fact sharing a house with his parents, along with his wife and four of their children.[2]
Found the following which seems to match, but born at an earlier date:

Pierre Arsenault was born on June 25, 1792, in Nipisiguit, Northumberland County, to Simon Arseneau and Marie Gertrude Melanson. He was baptized in Ristigouche on October 28, 1792. [1]
On November 3, 1814, Pierre married Rose Haché, daughter of Michel Haché and Marie Godin. Simon Arsenault and Michel Haché were the witnesses.[1][4] Rose was born on May 25, 1794, and baptized at Ste-Famille de Bathurst church in Nipisiguit. [1]
Urbain dit William was born on October 1, 1819 in Bathurst. In 1844, he married Marguerite Haché.[1]
Fabien married twice: (1) on May 15, 1843, he married Marie Haché, daughter of Charles Haché and Marie Goulet, in Nipisiguit. [5] (2) In 1852, Fabien married Marie Boudreau.[1]
Isaie was born around 1825. In 1850, he married Marie Lejeune.[1]
Pascal was born in 1833. He married twice: (1) in 1860 he married Mary Doucet; (2) in 1892, he married Marie-Patricia Cormier (Possibly Arseneau-176)[1]
Simon was born on September 10, 1826, and baptized on October 16, 1826, in Petit-Rocher. His godparents were Lazare Melanson and Charlotte Haché, and the ceremony was officiated by Father LeDuc, prêtre missionaire. (Simon is perhaps the Simon who married 1848 Monique Doucet in 1848, or the Simon who married N... in 1853)[1]
Ambroise was born and baptized on September 6,1828, in Petit-Rocher; his godparents were Sylvain Doucet and Adée Hachée. He married Rose Godin in 1851.[1]
Pierre was born around 1836 in New Brunswick. He was buried in Petit Rocher on March 29, 1862, at 26 years of age.(Possibly Arseneau-48)[1]
Césare dit Jérôme was born and baptized on May 14, 1836, in Petit Rocher. He married twice: (1) Mary Haché in 1856 and (2) Marie-Louise Roy in 1871. [1]
In 1825, Pierre was elected "marguillier" (the closest translation I can find is church warden), replacing Antoine Hachée. His role may have seen him responsible for the assets of the church in Beresford, the register of the poor receiving support from the Church, etc. This would have been a voluntary, unpaid role. He earned his living as a farmer.
In his older years, Pierre and Rose still headed a household that now consisted of his youngest son Cesar's family, including his wife Mary Sr., granddaughters Mary Jr., and Lucey, and grandsons Alexander and Joseph. [2]
1861 Canada Census
"Commencing at the Church Petit Rocher and extending to the Parish line". As it is recorded in lines 4 to 11 of the Census, we can surmise that the family lived near the church. The family is listed under the name "Asnow". All are French Canadian and Roman Catholic. I have calculated estimated years of birth.
Peter, father, 69 years old, farmer (est. year of birth 1792)
Rose, mother, 67 years old (est. year of birth 1794)
Children
Jerome, 25 (est. year of birth 1836)
Mary Snr, daughter-in-law, 27 years old (est. year of birth 1834)

I believe Pierre Arsenault and Rose Haché also had a daughter, Rose Arsenault, born in Petit Rocher, New Brunswick on Nov 30 1830. She was blessed at home (ondoyée) and later baptised on 16 Jan 1831 in Bathurst-Ouest (Ste-Famille), New Brunswick. Godparents were Charles Doucet Jr. and Olive Haché.
Rose Arsenault married Pierre Grant (1828-1912), son of Pierre Grant (1792-1852) and of Françoise Haché (1803-1861). The marriage took place 6 Sep 1852, in Petit-Rocher (St-Polycarpe), New Brunswick.
The godparents of their daughter Marie Grant, born 10 Apr 1854 and baptised 11 Apr 1854, in Petit-Rocher (St-Polycarpe), New Brunswick were listed as being Pierre Grant (presumably Pierre Grant's father) and Rose Haché (presumably Rose Arsenault's mother).
Also, the godparents of their daughter Anne Grant, born in Petit-Rocher, New Brunswick on 21 Jan 1856 and baptised 9 Feb 1856 in Belledune (St-Jean-l'Évangéliste), New Brunswick, were listed as being César Arsenault (presumably Rose Arsenault's brother) and Anne Grant (presumably Pierre Grant's sister)
Hi Denise, in the research notes it says that Fabien Arseneau married Marie Haché in 1843 and married Marie Boudreau in 1852.
According to Généalogie Québec Lafrance records, this couple continued to have children beyond 1852 and Marie Haché attended her son Sylvain Arsenault's wedding on the 16 July 1894.
I think there is some confusion over the entry in the Drouin Records, Acadia, Petit Rocher, 16 September 1852 when Fabien Commau (sic) married Marie Boudreau, witnessed by Frederick Commau (sic) and Rose Commau (sic).
Thanks,
Diane Dumont
Arsenault-1101 and Arseneau-48 appear to represent the same person because: Same name, same birthdate and place. Same spouse. No conflicting information. Same source cited
Hi Carroll - Do you have any additional information surrounding this couple? Could they be the parents of César Arseneault ? He was born in Petit-Rocher, NB, on May 14, 1836, to Pierre Arseneau and Rose Haché...
