Catherine is credited with popularizing the custom of drinking tea in the English Court. It had already become popular amongst the nobility in Portugal, where she raised.
Queens County, New York (aka the Borough of Queens, New York City) is widely believed to be named in her honor, although there is no surviving documentation to prove it.
