Candlers were often hired by Egg Producers and/or Grocery Stores to check the quality or development of the egg. Egg Producers were interested in the development of the embryo; Grocery Stores were interested in the edible quality of the yolk and white.

Candling is normally done in a semi-darkened or completely dark room, with the egg held by a light to detect those qualities.
