Mathew was born in 1842 in Botsford, New Brunswick, Canada. 
In the 1851 Census of New Brunswick Edward Dalton, 59, and Anastatia, 49, lived in Botsford, Westmorland. Their children were George 18, James 16, Sarah 14, Mathew 9, and Edward 6. 
In the 1871 Census of Canada Mathew Dalton, a single man aged 29 years and born in New Brunswick, was farming in Botsford. He was living with his brother George's family, and the Household Members, all Catholic Irish Canadians born in New Brunswick, were: George Dalton 39, Margaret Dalton 29, Annie Dalia Dalton 6, James E Dalton 4, Ellen Dalton 3, Flowrence Dalton 1/12, and Mathew Dalton 29.
Ten years later, in the 1881 Census of Canada, Matthew Dalton was still a single man. Two more children were born to George and Margaret: Matthew Dalton 4, and Charles Dalton 6/12.
In the 1901 Canada census on 31 Mar 1901 Mathew Dalton, aged 60 years and a truckman, was the married head of the household at Amherst, Cumberland, Nova Scotia, Canada. He was Irish Canadian and Roman Catholic and born in New Brunswick. Mathew had married Mary Elizabeth Mahony, aged 50 years in 1901, soon after the 1881 census as twenty years later he was the father of Anastasia Dalton 18, James Dalton 16, George Dalton 14, and William Dalton 10. All but William were born in New Brunswick, so the move to Nova Scotia was made before the 1891 census.
The 1911 census was entered and/or transcribed incorrectly (Mathers Dalton). Mathew was now 70 years old and still listed as a truckman. Two children were still living with Mathew and Elizabeth at Clarence St, Amherst: Anne Dalton 26, and William 21, a ledger keeper with the Royal Bank.
Mathew died aged 76 years on 1 February 1916 at 6 Clifford St, Amherst.
