Eliot - Use of spelling in the Old Parochial Registers begins about 1634. Use discontinued largely around 1700 then less and less to 1740, when it disappears entirely[1]

Eliott - Spelling begins around 1678. In heavy use 1700-1745, then mainly carried on by Stobs branch only[2]

Ellot - Earliest spelling of surname in Parish Registers. Begins 1601, ends around 1650, then only a few entries until around 1700, when it ends completely.[3]

Elliott - Use begins around 1690. Out of use largely by 1760 in Scotland, but becomes the predominant spelling of those displaced to Ireland and subsequently to America[4]
