Catherine also recorded as "Cathrine, was born about 1859/1860 to George Elliott and Mary Cassidy in Donegal, Ireland.
She travelled to New Zealand under the Assisted Immigration Scheme and arrived in Otago, 8 March 1883, on the ship 'Wellington', age 23, status Single. occupation 'Cook'. Catherine was accompanied by her sister Mary Ann.[1]
In 1883, Catherine married Matthew Baxter from Donegal who had been in New Zealand since 1875, Their marriage took place at the home of her brother Thomas in North Taieri. Her sister Mary Ann and Matthew's brother William were witnesses at the wedding.
They settled at Kuri Bush where Matthew worked as a Farmer. The following year Catherine's first born child died after just 8 hours. Five further children were born in the marriage.
In 1894, Catherine died suddenly at the age of 35 due to complications during pregnancy. [2] Catherine is buried at Otokia cemetery, BLOCK 6, PLOT 32. [3]
