One of two Samuel Fairweathers who were cousins, each married to an Elizabeth with children baptised in Framlingham around the same time.
This Samuel's children with Elizabeth Copping were mostly represented by Unitarian or Presbyterian baptisms, so are distinct from the other couple's children. These non-conformist baptisms covered the following children:
The baptisms of John (1805) and William (1808) are recorded in the regular Framlingham parish records. The Suffolk Family History Society have transcribed these, and both records specify mother's maiden name of Copping.
The children of the other Samuel with Elizabeth Sawyer are likewise identified by the transcriptions.

I have recently purchased the download of "Suffolk Baptisms (1754-1812) for the Deaneries of Loes & Orford" which is a spreadsheet of transcriptions made available by the Suffolk Family History Society (I have so far got a few of these where records are unobtainable from either free or subscription sites).
This one shows *two* baptisms in Framlingham for Samuel as son of John & Elizabeth Fairweather, dated 4th April 1762 and 3rd June 1764, with one for Ephanuel (daughter) in between them on 23rd May 1763. Other dates shown for other children seem to be corroborated, but I will be checking through these. With no apparent burial for an older sibling Samuel, (and the projected DOB of c1762 from the later records) it would appear most likely that they are for the same Samuel, baptised twice.
Most of the later Framlingham baptism records here helpfully give the mother's maiden name which should help verify that we have the children correctly. Again, I intend to go through them all and make sure.
Unfortunately, copyright limitations do not allow me to share the spreadsheets directly, but I have been referencing it on Wikitree as follows on the relevant profiles sources list:

I think we can now mark Samuel's parents as confident.
There were two Samuel Fairweathers born in Parham about ten year apart (they were first cousins). The elder married Elizabeth Copping (1776-1821) then Martha Clark (1800-1862) and had children with both. The younger married Elizabeth Sawyer (1774-1813), then Elizabeth Newson (1787-1876), and had children only with the former. All marriages were in Framlingham and almost all children were baptised there! The two Samuels are both seen on the 1841 and 1851 censuses with their second wives. Understandably confusion is easy. The following link shows what is hopefully an accurate picture of the Fairweather/Copping family, though it needs to be verified :
