Although Ann, Samuel's wife, has her age shoot up by 30 years between the 1851 to the 1861 census (from age 35 to 64), her age comes back down to 53 in the 1871 Census. The 1871 is therefore in accordance with the earlier censuses and the 1861 Census is a lone outlier. It seems probable that the same Ann exists throughout and that the 1861 Census merely reflects some kind of erroneous data entry.
