In handwritten family tree and 2nd source below her name is given as Margaret Harding (probably an Americanization of her name). Another handwritten list (written, I think, by Margaret's Great Great Granddaughter Leona (Kline) Novak) lists two Great Grandmother Saams, one born in 1819, and the other in 1821. Unable to verify if John was married twice--perhaps his first wife died in Germany, or perhaps I am misunderstanding my Aunt Leona's notes. Family tree and first two sources below indicate Henry was son of John & Margaret.
John's "...wife, whose maiden name was Margaret Harding, was born in Saxony, Germany, and is now re siding in the Upper Peninsula, being eighty-nine years of age. She has five children, namely: Louis, Charles, Henry, Annie, and Minnie, the last named being the only one born on American soil." (2)
An Anna Saam's funeral was held in the home of her son Louis Saam on Summit Street on 28 January 1912 (4).
Mrs. Saam's gravestone photo on findagrave clearly shows "1922-1912", however the Certificate of Death, also on findagrave, gives the date of birth as December 22, 1821, and gives her age as 90 years, 1 month and 3 days. That age matches her date of death, so I suspect she actually was born in 1821, not 1822 as shown on the gravestone. I did send a correction suggestion to findagrave on 5-20-2019.
