Jacob was born on September 22, 1841 in the village of Neudorf in the Glückstal district of the Odessa area and Black Sea region of South Russia to Jacob Hieb and Friederike (Deile) Hieb. He was the first of their 9 children. Jacob was baptized on September 25, 1841.
On December 4, 1865, at the age of 24, Jacob married Elisabetha Sattler (1844-1928) in the nearby village of Kassel.
