George was born in about 1784 and was probably baptised on 30 April 1784 at Over Wallop, Hampshire. He was the son of Joseph Hillary and Mary Hillary.
He married Emma Langridge on 18 January 1816 at East Dean, Hampshire, England[1].
They had at least 10 children.
George was a Church Warden at St Peter's, East Tytherley, Hampshire.

His wife probably passed away some time before 1846.
George's five sons (Stephen, John, William, George and James) emigrated from England to South Africa. His daughters also dispersed, some going into servitude.
George married, secondly, widow Elizabeth Jane Weaven (formerly the wife of William Bright) in 1846 in Andover, Hampshire, England[2]. She was 21 years his junior.

George Hillary probably died on 9 August 1858[3]. He was an Innkeeper, of the "Bullington Cross Inn" in the parish of Bullington, in the parish of Southampton.
