Whilst my knowledge is rather out of date and therefore may now be untrue, I did various amounts of work at the Cheshunt library about fifteen years ago and the librarian jealously guarded primary sources from being transferred to Hertford. It seemed to be a case of "over my dead body".
I think it is best to remember that Cheshunt is in an unusual position. It is part of Hertfordshire, but for various reasons associated with being associated with the start of the Bow Streeet Runners, it is effectively part of metropolitan London and in my time there, had Metropolitan Police, rather than Hertfordshire ones.
In case the situation with primary sources remains true, try to visit Cheshunt. They had a very comprehensive library of primary sources when I used to study there.

Where you do research depends on the type of records you want - and how much preparation you have done beforehand. (Ideally you should start preparations six months in advance - using your local LDS Family History Centre to check parish registers - so that when you are in England you can concentrate on other records which are not readily available on microfilm overseas.)
Cheshunt has a small library and I doubt that there is much there which is not at Hertford - which has far more comprehensive records.
However I note that the surname HOSTY is very rare in England and does not occur anywhere in Hertfordshire in the 1881 census, while the distribution of the name SORRELL could mean that if Maria came from the Cheshunt area she could have come from just over the county boundary into Essex. This could mean visiting the Chelmsford records office at some stage.
I also note that the IGI shows that William HOSTY married Maria SORRELL at St Andrew's, Enfield, on 24th October, 1819 (you give 1817) - and if you have not already viewed the register microfilm at your local LDS Family History Centre you would need to go to the London Metropolitan Archives at 40 Northampton Road, London, EC1RR 0HB as Enfield was in Middlesex.. The register may give some indication as to whether they were from Enfield, or some other parish - so it is essential viewing. Should you wish to check up on any births, marriages or deaths after June 1837 you may find the indexes at the Family Resource Centre, Myddleton Street, London useful - although the delay in producing certificates are really incompatible with a short stay in England.
