The reason it seems likely that Eric was actually born in 1761 is that the only Eric Larsson residing in Storbo in 1784, the year of the marriage between Eric Larsson and Anna Hansdotter, gives his birth year as 1761. This is in addition to the fact that an Eric Larsson was not found in the 1763 Simtuna christening records.
