Jakob Polak was born on July 6, 1885 in Zutphen, Gelderland, Nederland to Joseph Polak and Emma (Schwarz) Polak.

Jacob Polak the flavor business, in 1903 in Holland in his father's business which had been in existence since 1885. He started with the firm of Polak and Schwarz, which his father, his brother Henri, and he, left in 1914, when they started their own firm, N. V. From 1914, N. V. engaged in this business and manufactured essential oils, concentrated oils, terpeneless oils, perfume compounds, synthetic materials, especially aromatics, fruit juices, natural flavors, and imitation flavors, which it sold all over the world.[2]
He married 1) Estella Judith van Praag on Nov. 10, 1908 in Amsterdam, the Netherlands.[3][4] Estella died in 1911.
He married 2) Eva Elizeba Alexander Polak.[5] Together they became the parents of Frits Johan Polak.
Jakob was the co-owner of Polak's Frutal Works in New York with his brother and sister-in-law.
