I did a tour of a local brewery and found these family crests hanging in the caverns. No one seems to know what they stand for but have been on the walls for years. The history of the brewery began in 1857, when Henry Huether came from Germany to the town of Neustadt, Grey County. He founded the Crystal Springs Brewery in 1859 which was built over a natural spring. In the early 1860s, a fire destroyed much of the wooden structure. Forty stone masons were then brought over from Germany to rebuild the brewery. Local fieldstone was brought in by farmers in exchange for beer. By 1869 it was ready to begin brewing again.
