Unfortunately I cannot provide documentation for this. All records that I have found do not reference her last name. I believe I originally obtained her data from an unsourced tree on FamilySearch and it was uploaded onto Wikitree when I imported my GEDCOM (newbie mistake!). She is individual LC1B-NGG on FamilySearch, which shows last name as Symonds. Simeon is an alternate last name. It is possible someone assumed that because she had a son named Simeon that he was named using her maiden name. That FamilySearch tree shows several generations of her supposed ancestors with the last name of Symonds or Simmons, but this connection is doubtful.
