The 1880 census shows the family, but it is unclear to me who mother-in-law Adeline HERBERT is. That this is the family of Pierre Octave FALGOUT and Emee (Amy) MONTET is clear - all of the children's births can be accounted for. But Octave FALGOUT's parents were George FALGOUT and Useline CHAMPAGNE, and Emee MONTET's parents were Evariste MONTET and Leocadie PICOU. In neither case is a mother named Adeline or anything similar; and HERBERT (HEBERT?) is not involved at all.
Is Amy HERBERT a second wife of Octave FALGOUT? This is the most likely explanation. The oldest child listed with Octave and Amy (Sarah) is 16, while Amy is listed as 30. It is certainly possible that Sarah was born when Amy was 14, but given the confusing circumstances, I think it is most likely that Emee MONTET died, and Octave remarried to Amy HERBERT (HEBERT).
The 1870 census may help to determine the answer, but I cannot locate Pierre Octave FALGOUT in 1870.
