Edward was born "Joseph Edouard Simon" to Ceran Anatole and Julienne Adele Simon on 26 June 1872 in Vacherie, St. James Parish, Louisiana. He was baptized 13 July 1872 in Our Lady of Peace, South Vacherie. Edward died 24 January 1947 in Garyville, St. John the Baptist Parish, Louisiana, and is buried in St. Peter's Cemetery, Reserve, St. John the Baptist Parish. Edward was married in 1894 to Marie Felicie "Felicia" Millet.
By 1910, Edward and his brother Henry were farming their grandfather Froisin Simon's large farm in Vacherie, St. James Parish. Their families are listed in adjacent but separate households in the federal census.
