Good question.  I've been working on my Pruden or Prudden line and there's no doubt that the same person can be found using both spellings, so do you simply go with the earliest spelling for a particular person, or look at the spelling the father used or what?
The LNAB should represent your best estimate of the name the child would had as a last name at the time of birth. We have to accept that our ancestors and the people who kept records were inconsistent about spelling of their names (heck, I have some living relatives who are inconsistent), and use some judgment in choosing an LNAB. (For example, if a family had seven kids and the first three and last three were baptized Prudden but child #4 was baptized Pruden, I'd call them all Prudden. Most situations are more complicated than that.)

But be sure to include all of the variant spellings in a data field on the profile (e.g., "Other Last Names").

PRDH  lists Presseau as the Standardized name ...

There have been numerous discussions about the use of standardized vs. documented French Canadian names on G2G, some of which I have followed closely, others not so much because my attention was elsewhere. Since I now need to complete merges I just want to get a sense of where the discussion about Last Names at Birth is in the Québecois Project.

She is baptized Marguerite Présot on 5 Sept 1681 in Lachine, Canada, Nouvelle-France.  Présot and Prézot have the exact same pronunciation.  Her father's name is Michel Présot, mother's name is Marie Chansy on that record.  Modern-day version of the name is Presseau.  Her father's marriage shows his name listed as Prézot.  He is from France, as is her mother. ref Quebec, Vital and Church Records (Drouin Collection), 1621-1997
