I have a cousin saying we are connected with the Gilbert De Umfreyvilles family. How would I find this info?

if you mean the nobilty of England try alternate spellings  d.Umfraville and d'Umfreville.  Pedigrees may be found at  thepeerage.com  and tudorplace.com   Some descendants of the family who came to Colonial America may also be found in the book by Charles Browning  AMERICANS OF ROYAL DESCENT
