ancestry shows Pierre Gamelin and Elizabeth Bourguoin to be her parents, but I can't find a good source

There does not seem to be anything that I can find at familysearch.org that shows information about Pierre Gamelin born 1735 plus or minus a year.

Drouin has Angélique Gamelin daughter of Pierre Gamelin and Elisabeth Bourguignon, and a lot more with variation like Angèle, Angélique, Archange, also Bourgouin, Bourgoin or Bourgouin dit Bourguignon.

her parent were probably born around 1730's - 50's

I can't make out the date on the cemond document in your link - can you?

I'm confident Joseph Jean-Baptiste Giroux married Angele Gamelin on April 8, 1820 in Shipton, Quebec. They had 6 children together. I don't believe either one of them had another marriage, but I could be wrong on that.

So this record for Angelique Lavignie, could not be correct.
