Am trying to discover who are parents of Norval Douglas Parks b.21 Jul 1825 in New Jersey, - d.22 Dec 1920.

I believe Norval Douglas Parks was married to Susan D. Thomas of Easton, Northampton Co., Pennsylvania.  I have documentation from 1860 to his death.  There is no record of why he wasn't living with his parents at the age of 5 - or ever!

Do you know where he died? Order a death certificate. It should list his parents. Ancestry has Pennsylvania Death certificates and there doesn't seem to be one for your N Douglas, although there is one for his son.
