Watkins-1058 and Watkins-8272 appear to represent the same person because: I adopted profile Watkins-8272 and found yours. Yours is earlier so will be the default profile. They are both incomplete. Merging them will fill in many blanks for Joseph.

They have the same parents, and birth & death dates match. They are the same person.

Has anyone found proof of service for Confederate civil war service?

There’s no proof of service for this Joseph. There are several clues for a Joseph Watkins that is married to a woman named Mary, but those seem to lead back to Ohio where neither of our Joseph & Mary have been. There are leads that a Joseph Watkins served in the 65th Regiment Georgia Infantry, but that regiment was organized on 1 Mar 1863 and had their 1st battle (of many) on 4 July 1863 in Vicksburg. This was well after Joseph had passed.

I’ve seen many others include Confederate service to our Joseph on their family trees, but it’s not correct.
