He served as Justice of the Peace in Washington Parish, Louisiana between 1822 and 1841, and was notary public there in 1838.
Peter was a witness on the deed of Sarah Robertson, widow of Matthew Robertson on 14 Dec 1836 in Tangipahoa Parish, Louisiana.[3]
On 27 Apr 1854 he purchased 320 acres in Tangipahoa Parish, Louisiana situated on Big Crek and bounded by White Spring land east, Spring north, public land west, and south by lands of Spencer M. Bankston, his brother.
On 25 Aug 1871 Peter was appointed Postmaster for Washington Parish, Louisiana.
An inscription, written by Peter Bankston in his family Bible, reads:
Peter Bankston was born 1/15/1789; Tabitha Robertson, his wife, born 11/29/1794; d 12/25/1871. We were married 12/15/1814; commenced housekeeping 2/7/1815/ we moved Dec. 1815 and settled on the place I yet reside. She left me on Christmas night 1871 for a better world above. Since her demise time seems to hang heavily with me.
P. S. We united with the regular Baptist Church known by the name of Mt. Nebo in the latter part of the year 1813. We have raised 9 children on the present Homestead, eight of whom are yet on mortal shore.
