Based on this death record for one of their sons, my guess is that John the father's middle name is Frank or Franklin. But, that's just a guess based on his middle initial of "F." and the son having the name Frank.  It's also interesting to note in this record that the son is listed as being Canadian even though he was born in SC...maybe her renounced his US citizenship to become Canadian?? >> "South Carolina Deaths, 1915-1965," database with images, FamilySearch (https://familysearch.org/ark:/61903/1:1:N922-HTQ : 18 April 2016), J. F. Simmons in entry for Frank James Simmons, 11 Oct 1943; citing , Simmons, Frank James, 1943, Department of Archives and History, State Records Center, Columbia; FHL microfilm 1,943,924.

This 1870 census record has Matilda's estimate birth year range and her parents and some siblings in it: "United States Census, 1870," database with images, FamilySearch(https://familysearch.org/ark:/61903/1:1:M8RR-TJX : 17 October 2014), Matilda Simmons in household of E* Watson, South Carolina, United States; citing p. 24, family 172, NARA microfilm publication M593 (Washington D.C.: National Archives and Records Administration, n.d.); FHL microfilm 553,005

And, this 1880 census record gives her middle initial and a birth year: "United States Census, 1880," database with images, FamilySearch(https://familysearch.org/ark:/61903/1:1:M6SP-425 : 14 July 2016), Matilda S Watson in household of Enin Watson, Seneca, Oconee, South Carolina, United States; citing enumeration district ED 125, sheet 382C, NARA microfilm publication T9 (Washington D.C.: National Archives and Records Administration, n.d.), roll 1236; FHL microfilm 1,255,236.

Also, it looks like Mattie remarried at some point, which may be why she's been challenging to get info on:

Thank you.
It's strange that Matilda Watson  is 10 years old living with her parents and is already having the last name Simmons?
In looking at the 1870 and 1880 census is together, my guess is that her middle name may be Simmons...and that then she happened to marry someone with the surname Simmons.  See how in the 1880 census her middle initial is "S."?  So, perhaps in the 1870 census, they listed her with her first and middle name? Just a guess, but - if she were my ancestor - that would be my initial take on it for pursuing validation with further research.
I wish you the best.  Her name was Matilda Magnolia Watson. She was the daughter of Elizabeth Hood rom Alabama. She was a step daughter of Erwin Watson. She was my great grandmother.
