Several sources discuss birth/baptism records for Isaac Simonson, for instance here (person (IV) on that page) https://hdl.handle.net/2027/wu.89064411564?urlappend=%3Bseq=130 These sources state very precisely that he was baptised December 17, 1732 at "the church in New Amsterdam". I presume this means the reformed Dutch church, but when I look through the year 1732 in "Parents and Witnesses at Baptisms in the Reformed Dutch Church, 1731-1800" on American Ancestors, I see that December 17 is listed but no baptism for Isaac. Could there be a different church? Or is this volume incomplete? Or... (Also, were all the baptisms at that church at that time on Wednesdays?) Edit: okay, here's a supposed bible record that appears to be for the same Isaac: http://www.nygenweb.net/richmond/misc/BibleRecords/IMG_1475.JPG but gives a birth date of July 12, 1734. But image IMG_1473 in the same series says this was one of a long string of dates written on loose sheets that were placed in the bible, so perhaps less credible. I don't see a 1734 baptism in those Dutch church records either.
